If you like avocado, you’ll love this one. Just mash the avocado with a pinch of salt and spread this on a wholewheat toast. You can top it up with a sliced boiled egg or a skinny fried egg. The creamy avocado is a healthier source for fat than butter or cheese and contains protein. The egg adds to the protein content. Homemade granola bars with fruits

Granola is delicious and super easy to make. All you need to do is mix rolled oats with applesauce, a neutral oil, sugar, and plenty of nuts. You can also add dried fruits like dried cranberries. Press this down in a lined baking dish and bake for 15-20 minutes. Keep an eye to make sure that it does not burn. Once they are out, take them out and cut them into bars. You can also opt not to bake there as bars, but as plain granola which you can eat with milk or yoghurt. 

Yoghurt parfait with fruits

The traditional parfait is made with sugar syrup, eggs, and cream. This one is far simpler to do and needs just three ingredients. To make yoghurt parfait, just add maple syrup or honey to greek yoghurt in a pot. Add a tablespoon of chia seeds and stir them in. The chia seeds will swell in the yoghurt and give it a more jelly-like consistency. Top this up with fruits like mixed berries or cubed mango before eating. You can give the parfait different flavours by adding cocoa powder, peanut butter, or a fruit puree. Top this with some of the granola to make it more filling.   

Oats, banana and zucchini muffins

You can make these muffins on the weekend and you have a quick pick-me-up breakfast! These muffins also freeze well. So, make a big batch and freeze ahead. To make, mix rolled oats, banana, sugar, eggs and grated zucchini. You can substitute the sugar with natural alternatives like molasses, dates, honey, or maple syrup. But you may have to adjust the proportions as these will make the batter wet. Bake these for 15 minutes in a 180 degrees oven. 

Egg cups

These easy quiche-like little omelettes cook quickly. To make, beat eggs with salt and pepper. Add a mix of ingredients of your choice, such as spinach, sundried tomatoes, chilli flakes, mushrooms, broccoli, peppers, or ham. Top with some cheese, pour into cupcake moulds and let cook in the oven. Make sure that the vegetables are cut small so that they cook quickly with the eggs.
